Recipe - Hash Browns

One fourth cup Butter or margarine
1 pound Idaho Potatoes, peeled,
grated and squeezed dry
1 lg Onion, minced
1 md Red or green bell pepper,
seeded and minced
One half teaspoon Salt
1/8 teaspoon Freshly ground black
pepper
In a 1 2inch skillet over mediumhigh heat, melt the butter. Add Idaho
Potatoes, onion, and bell pepper and cook about 8 to 10 minutes, gently
stirring the mixture every few minutes. Add the salt and pepper: cook until
the potatoes are well browned on both sides and tender. (Makes 4 servings)
