Recipe - Harvest Pumpkin Bread - Southern Living

1 2/3 cup Sugar
1 cup Soy oil
4 Eggs
1 cn (16ounce) solid pumpkin
1 One half cup Flour
One half cup Soy flour
1 teaspoon Cinnamon
1 teaspoon Salt
1 teaspoon Soda
2 teaspoon Baking powder
Preheat oven to 350 degrees. Spray 10 x 15 x 1 inch pan with nonstick
spray. In large bowl, combine sugar, eggs and oil. Add pumpkin and mix
thoroughly. Combine flours and spices and stir into pumpkin mixture.
Pour batter into prepared pan. Bake for 2530 minutes, or until tester
comes out clean from middle of pan. Yields 24 to 36 bars.

grams total fat/3 grams saturated fat/22 mg cholesterol/173 mg sodium
