Recipe - Hard Meringues

4 Egg whites at room
temperature (One half cup)
One fourth teaspoon Salt
One fourth teaspoon Cream of tartar
1 cup Granualted sugar
One half teaspoon Vanilla
OPTIONAL INGREDIENTS
1 cup Chopped nuts
1 teaspoon Finely grated lemon rind

Beat egg whites with salt and cream of tartar. When egg whites from soft
peaks, very gradually add the sugar. Fold in the flavoring and nuts. Drop
by spoonfuls on cooky sheet dusted with corn starch. Bake 1 hour 250
degrees F.
This mixture can be spread into 3" or 8" pie shell shape, baked then filled
with cooked pudding or other filling.
