Make hamburgers as you
prefer
2 tablespoon Olive oil
1 lg Onion
4 Long green chiles; (up to 6)
2 Cloves of garlic; chopped
Broil, steam and peel long green chileseither Big Jim's for medium or
Barker's for hot
Cut the chiles into long strips, discarding seeds and stems. Cut the onion
toward the root end and slice the pieces so they are more or less like
strips.
Heat the oil in a medium skillet. Add the onions. Cook over mediumhigh
heat until lightly browned. Add the chiles and the garlic. Strirfry until
the chile is hot.
Serve mounded on top of hamburger patties.
