Recipe - Ham Jam

Three fourths cup Cold Water
1 Env Gelatin Powder
One half cup Orange Juice
1 teaspoon Orange Peel; grated
One fourth cup Lemon Juice
1 teaspoon Lemon Peel; grated
Three fourths cup Honey
10 ounce Ham Cubes; cooked
In a small, microwavesafe bowl, combine water and gelatin; allow to soften
for 5 minutes. Cook on high for 1 to 2 minutes or until mixture boils and
gelatin is completely dissolved.
In a food processor fitted with a metal blade, combine hot gelatin mixture
and remaininng ingredients. Process untill all ingreds. are pureed. Pour
into a 3cup mold or decorative bowl. Chill until firm. Serve with hot
bisquits, crusty rolls or assorted crackers. Garnish with chopped fresh
mint and additional grated orange and lemon peels.
Makes 2 One half cups.
