125 g Plain flour; (4oz)
1 pn Salt
1 Egg; size 3
300 ml Milk; (One half pint)
FOR THE FILLING
1 200 gram car full fat soft
cheese; (7oz)
125 g Ham; chopped (4oz)
2 Bananas; peeled and cut or sliced up
2 tablespoon Freshly chopped parsley
Salt and freshly ground
black pepper
FOR THE TOPPING
50 g Grated mozzarella cheese;
(2oz)
Freshly chopped parsley
To make the pancakes, place the flour, salt, egg and milk in a bowl and
beat well.
Pour a little batter into a nonstick frying pan until the batter coats the
bottom of the pan. Cook for 12 minutes, loosen the edges and cook other
side for further 12 minutes or until golden brown. Continue to make 68
pancakes.
Mix all the filling ingredients together, divide between each pancake, roll
up and place in an ovenproof dish.
Sprinkle with the cheese and place in a preheated oven 200 C, 400 F, Gas
Mark 6 for 1015 minutes, until golden. Sprinkle with the parsley and
serve.
