Recipe - Halibut With Roasted Tomato Vinaigrette

2 tablespoon Fresh ginger minced
1 Clove garlic minced
2 tablespoon Scallions cut or sliced up thin
2 tablespoon Sesame oil
2 tablespoon Lemon zest
4 Halibut fillets
Salt and pepper
Directions: In a mixing bowl, combine the ginger, garlic, scallions, oil
and zest. Remove the skin from the fillets. Divide the ginger mixture and
pat evenly on the fillets. Lay a fillet in the center of an 8 inch sheet of
plastic wrap. Fold the plastic to create a tight package. Repeat with other
fillets. In a steamer basket or vegetable steamer, steam the fillets over
simmering water for about 1214 minutes. Unwrap and serve.
