Recipe - Haitian Sweet Potato Pudding

2 One half cup Hot; cooked sweet potatoes,
mashed
2 Eggs
3 tablespoon Shortening
One half cup Milk
1 tablespoon Flour
2 cup Sugar
2 teaspoon Baking powder
One fourth teaspoon Salt
One fourth teaspoon Nutmeg
One half cup Butter
1 cup Brown sugar
Mix sweet potatoes with wellbeaten eggs. Add shortening and milk, mixing
thoroughly after each addition. Stir together flour, sugar, baking powder,
salt and nutmeg. Add to first mixture, beating well. Pour into 1quart
casserole lined with mixture of brown sugar and butter. Bake at 350 for
approximately 1 hour.
