Recipe - Habanero Tropical Fruit Sauce

1 Mango, minced
1 Papaya, minced
One half Pineapple, cored and minced
One half small Onion, minced
1 Carrot, minced
1 Habanero, seeded and minced
1 teaspoon Sugar
1 cup Chicken stock
1 teaspoon Mint
1 teaspoon Peanut oil
1 ds Worcestershire sauce
1 ds Tabasco sauce
Saute onions and carrot in peanut oil for 5 minutes. Add remaining
ingredients, simmer for 10 minutes. Strain, then puree in food processor.
Add additional stock to maintain thin consistency. Garnish with mint. Serve
over grilled seafood or chicken. Serves 4.
