FOR THE MARINADE
1 small Onion; finely chopped
2 Cloves garlic; finely
chopped
1 15 grams pac herbs for
stuffing; finely chopped
6 tablespoon Olive oil
Juice and zest of One half lemon
FOR THE FISH
400 g Haddock fillets; (13oz)
2 tablespoon Sunflower oil
For the marinade, blend all the ingredients together and pour over the
haddock fillets, cover and leave to marinate in the refrigerator for 30
minutes.
Heat the oil in a large frying pan. Remove the fish from the marinade and
cook for approximately 45 minutes on each side.
Add the remaining marinade to the pan and cook gently for 5 minutes.
Serve on a leafy salad with new potatoes or noodles.
