Recipe - Guiness Stew

1 tablespoon Vegetable oil
1 sl Bacon, cut into1/2" peices
2 pound Lean stewing beefcubed 1 1/2
1 lg Onion chopped
2 tablespoon Flour
2 Carrots, cut or sliced up
12 small White onions, peeled
1 One half cup Beef stock
6 One half ounce Guiness beer
2 tablespoon Dark brown sugar
2 tablespoon Red wine vinegar
1 Bouquet garni
Coarse salt
Pepper
Preheat oven to 350 degrees. Heat oil in a heavy casserole which will fit
into the oven and go on top of the stove, add the bacon. Fry until browned,
drain the bacon on paper towels. Dry the cubes of beef with paper towels.
brown in the bacon drippings, remove the beef. Add the chopped onions,
brown lightly. Stir in the flour, cook for 23 min. do not let the flour
burn. Return the beef, along with its juices to the casserole. Add the
bacon, carrots, white onions, stock, guiness, sugar, vinegar, bouquet, salt
& pepper. Bring to a boil. Cover. Bake 1 One half 2 hours, stirring
occasionally. serve warm.
