Recipe - Grouper With Salsa Verde Pepin

One fourth cup Olive oil
1/3 cup Minced onion
1 small Minced green pepper
1 Clove garlic crushed
One fourth cup Wine vinegar
2 tablespoon Minced parsley
Salt to taste
Pepper to taste
2 pound Grouper fillets
Seasoned flour
One fourth cup Clarified butter
Saute onion, green pepper and garlic in One fourth cup olive oil over high heat.
Stir in vinegar, parsley, salt and pepper. Keep sauce warm while you cook
fish. Dredge 2 pounds grouper fillets in seasoned flour. Saute in One fourth c
clarified butter at high heat for 3 minutes each side. Pour sauce over
fillets and serve.
