Recipe - Grilled Vegetable-Hummus Roll-Ups

4 Carrots; peeled, and
Sliced on the diagonal
4 Zucchini; cut or sliced up on diagonal
4 Yellow squash; cut or sliced up on
diagonal
One fourth cup Balsamic vinegar
1 teaspoon Minced garlic
1 teaspoon Dried oregano
1 teaspoon Dried basil
8 Wholewheat tortillas
1 cup Hummus; (see recipe)
Preheat the grill or broiler. In a large bowl, toss the vegetables with the
vinegar, garlic, oregano, and basil. Grill or broil until browned and
tender on each side. Remove. Warm the tortillas 30 seconds under the
broiler or wrapped in plastic in the microwave to soften. To assemble,
spread 2 tablespoons of Hummus on each tortilla. Top with One half cup of the
vegetables and roll up tightly. If desired, slice the rolls on the diagonal
to serve. This recipe yields 8
