Recipe - Grilled Standing Rib Roast

2 pound Sirloin steak; (1 1/2"/4cm

1 tablespoon Brown sugar 15 mL
1 teaspoon Coarse black pepper 5 mL
2 Cloves garlic; minced 25mL
2 tablespoon Olive oil 5mL
1 teaspoon Coarse salt 5 mL
MELTED ONIONS
2 tablespoon Olive oil 25 mL
4 pound Large sweet onions 3 kg
1 tablespoon Sugar 50 mL
One fourth cup Balsamic vinegar 50 mL
Salt and pepper
2 Long French Sticks; (about
16") 2
One half cup Garlic mayonaiseoptional
125 mL
1 bn Arugola 1
Trim fat from steak. Combine sugar,pepper,garlic,oil and salt. Allow to
marinate about one hour.
Heat oil in a large deep skillet. Add onions and cook about 10 minutes
stirring occasionally. Reduce heat to medium and cook about 30 minutes. Add
sugar and vinegar and cook gently, adding water if necessary,until onions
are very tender and "melted". This may take 30 to 60 minutes. Keep warm or
reheat befor serving.
Cut each bread in 4 pieces. Cut each in half horizontally leaving one edge
attached.
Grill steak 5 to six minutes per side until medium rare. Let steak rest 5
minutes and slice thinly on the diagonal.
Place some slices of steak in each bun,smear onions on steak and top with
arugola. Spread top of bun with mayonnaise if you wish.
