DRESSING INGREDIENTS
4 Hard cooked egg yolks
1 teaspoon Sugar
2 teaspoon Dijon mustard
One half cup Olive Oil
1/8 teaspoon Rubbed Sage
One fourth teaspoon Paprika
Salt & Pepper to taste
SALAD INGREDIENTS
4 cup Grilled and minced boneless
pork chops
One half Vidallia sweet onion; minced
One half Red bell pepper; minced
1 cup Chopped celery
4 Hard cooked egg whites;
chopped
1 Tart apple; cubed One half inch
1 cup Shredded cabbage
In a medium bowl, mash egg yolks finely with a fork. Add all other dressing
ingredients and whisk together.
In a large mixing bowl, combine all salad ingredients and toss. Pour
dressing over and fold together until salad is coated with dressing. Chill
approximately 2 hours before serving.
