Recipe - Grilled Halibut

One half cup Olive oil
One fourth cup Lemon juice
2 tablespoon Chopped chives or minced
shallots
1 tablespoon Dijon mustard
1 Minced clove garlic
One half teaspoon Salt
12 small New potatoes partially
cooked
2 md Summer squash halved and
cut or sliced up vertically within
One half inch of top
2 Yellow/green peppers halved
seeded and cut or sliced up in
vertical strips
1 lg Onion cut into One half to 3/4
inch thick slices
4 Halibut; (6oz each) steaks
or other fish steaks

Combine oil, lemon juice, chives, mustard, garlic and salt in small mixing
bowl; blend well. Arrange vegetables on grill about 5 minutes before fish;
baste frquently. Arraneg fish on grill; cook 5 minutes per side or about 10
minutes per inch of thickness, basting frequently.
