Recipe - Grilled Chicken With Lemon And Rosemary Marinade

One half cup Lemon juice
One half cup Fresh mint; chopped
8 Cloves garlic; minced
2 tablespoon Olive oil
One half teaspoon Fresh ground black pepper
1 Three fourths pound Chicken breast halves
without skin
Lettuce leaves; shredded
12 Pieces skewers; bamboo
In a large shallow dish, combine lemon juice, mint, garlic, oil and pepper.
Slice chicken across the grain into One half inch thick slices. Add to the
lemon mixture and toss to coat well. Cover and marinate for at least 1
hour or overnight.
Soak bamboo skewers in water for at least 30 minutes.
Prepare gas or charcoal grill. Thread chicken on skewers and grill about 2
One half 3 minutes on each side.
Serve over shredded lettuce. Garnish with fresh tomato wedges if desired.
