Recipe - Grilled Chicken Marinade
Categories: None, Grilled Chicken Marinade
One half cup Orange juice
One fourth cup Fresh lemon juice
1 teaspoon Dijon style mustard
1 teaspoon Worcestershire
One fourth cup Canola oil
2 Minced cloves of garlic (up
to 3)
One fourth cup Chopped fresh parsley
1 teaspoon Dried oregano
Salt and fresh ground pepper
to taste
Here is a nice marinade for grilled chicken breast or chicken wings. The
combination of citrus goes well with the herbs. Marinate chicken breasts
34 hours in this mixture or wings 46 hours. It also works well for
cooking in the skillet too. (If you can't get fresh parsley, use 1
tablespoon dried.)
Combine the juices, mustard and worcestershire in a nonreactive bowl. Whisk
in the oil a little at a time. Add the garlic, parsley, oregano, salt and
pepper.
