Recipe - Green Tomato And Sausage Casserole

1 tablespoon Butter or oil
1 cup Green tomatoes; in 1/2"
pieces
1 tablespoon Chopped parsley
1 md Onion; coarsely chopped
2 small Green chiles; cut or sliced up ,
optional
1 lg Carrot; cut or sliced up or chopped
8 ounce Smoked sausage; thinly
cut or sliced up
1 cup Rice
2 cup Chicken broth
Saute onion, green tomato, chiles and carrot in butter or oil for a few
minutes. Transfer to a 2 One half qt casserole. Stir in rice, sausage, and
parsley. Heat broth to boiling and add to casserole. Cover tightly and bake
at 350 F for about 40 minutes or till rice is done and liquid is absorbed.
Check after about 30 minutes and add a little additional broth or water if
it seems too dry. Makes about 4 servings.
NOTES : Wieners or franks can be used in place of sausage.
