Recipe - Green Tomato Pie Filling

3 tablespoon Crumbs
4 cup Peeled slices green
Tomatoes
1 cup Light brown sugar
Juice and zest of 1 lemon
One half teaspoon Each cinnamon and nutmeg
5 tablespoon Flour
1 tablespoon Tapioca
(cereal crumbs work well)
Sprinkle crumbs in bottom of unbaked crust. Peel tomatoes by blanching in
boiling water and slipping the skins off. Combine tomatoes, sugar, lemon
juice and zest, spices, flour, and tapioca. Place in crust over crumbs.Top
with crust, bake 375 degrees 3540 minutes until crust is golde
