Recipe - Green Pepper In Tomato Sauce

One half cup Thinly cut or sliced up onion
2 Cloves garlic; minced
One fourth cup Olive oil
2 cup Stewed tomatoes or 1 1lb
can
2 teaspoon Sugar
1 teaspoon Salt
1 ds Pepper
One half teaspoon Basil
4 lg Green peppers; cut into 3/4"
strips (up to 5)
Cook onion and garlic in 1 tbsp of the oil till just tender; add tomatoes
and spices. Simmer uncovered till sauce is slightly thick, about 20 min.
Cook pepper strips in remaining 3 tbsp oil, turning frequently till tender
but still crisp. LIft from oil to serving dish; sprinkle with salt and
pepper. Pour tomato sauce over green peppers; serve at once.
