Recipe - Green Olive Pesto

1 One half cup Large or jumbo green
olives,; such as ascolane,
pitted
One half Red onion,; finely chopped
One fourth cup Pine nuts
1 Clove garlic,; thinly cut or sliced up
One half cup Extra virgin olive oil,;
give or take I ounce
In a food processor, combine olives, onion, pine nuts and garlic and blend
I minute. With motor running, slowly pour in olive oil until a thick,
smooth paste is formed. texturally resembling rough bechamel. Allow to
stand One half hour before using.
Yield: 2 One half cups
