Recipe - Green Olive-Cucumber Salad

1 pack Limeflavored gelatin; 3oz.
1 cup Water; hot
One half cup Water; cold
1 teaspoon Lemon juice
1 teaspoon Lemon rind; grated
1 teaspoon Onion; grated
One half teaspoon Salt
1 md Cucumber; peeled and chopped
1/3 cup Green olives; onionstuffed
Dissolve gelatin in hot water. Add cold water, lemon juice, lemon rind,
onion, and salt. Chill until slighlty thickened. Fold in cucumber and
olives. Pour into a 1quart mold and chill until firm.
