Recipe - Green Chili Rice

4 cup Cooked rice
1 Stick butter
1 cup Onion, chopped
One half pt Cottage cheese
One half pt Sour cream
Salt and pepper to taste
2 One half cup Coby/Jack cheese, grated
2 Green (4 ounce ea) chiles,
drained and chopped
1 Jalapeno pepper, chopped
fine
Saute onion in butter. Add onion to cottage cheese, sour cream and then add
rice. Place One half of the mixture in a casserole dish. Sprinkle on green
chilies, jalanenos and grated coby/jack cheese. Add rest of rice and top
with another layer of the cheese and chilies. Bake at 350 F. for 20 to 30
minutes until hot and cheese is melted.
