Recipe - Green Bean And Jicama Salad

DRESSING
1 tablespoon Soy sauce
1 tablespoon Rice vinegar
2 tablespoon Fresh lemon juice
One half teaspoon Honey or equiv.
Sweetener
One half teaspoon Ground ginger
One half teaspoon Dark sesame oil
VEGETABLES
1 pound Fresh green beans
1 md Jicama peeled and
Julienned
1 Red onion thinly cut or sliced up
Blanch the green beans, shock them in cold water to halt the cooking
process, chop them into bitesize pieces, and set them aside.
Whisk together dressing ingredients. Add green beans, jicama, and red
onion. Toss well with dressing. Chill at least 1 hour before serving,
tossing again after One half hour (to help the marinating process).
