1 One fourth pound Cherry tomatoes, 3+ 1/2
Cups
3 ounce Day old bread*
6 Cloves garlic peeled,
Sliced
One half cup Parsley coarsely chop
One half teaspoon Freshly ground black pepper
2 tablespoon Virgin olive oil
One half teaspoon Salt
One fourth cup Grated Parmesan cheese
Preheat the oven to 375 degrees. Wash the tomatoes and remove and discard
any stems. Place the tomatoes in a bowl and mix in the remainder of the
ingredients. Transfer the mixture to a 6cup gratin dish. Bake at 375
degress for 40 minutes. Serve immediately. Nutritional analysis per
serving: calories 185; protein 6 gm; carbohydrates 21 gm; fat 9.4 gm;
saturated fat 2.1 gm; cholesterol 5 mg; sodium 506 mg.
