Recipe - Grandma Rachels Shrimp Salad

1 pound Fresh shrimp; in shell
3 Hardboiled eggs; chopped
2 Stalks celery; minced
1/3 cup Onion; finely chopped
Lemon juice
Mayonnaise
Salt and pepper; to taste
Add 1 teaspoon of lemon juice to boiling water. Do NOT salt water. Wash
shrimp in cold water, then boil for 5 minutes or until just pink. Remove
the shrimp from the water and drain. Shell under cold running water, and
devein. Dice into small chunks. Add minced celery, eggs and onion. Dress
with mayonnaise, pepper and lemon juice to taste.
Note: If desired, substitute One half bunch of green onions for the onion.
