Recipe - Gouda Pecan Wafer Cookies

One half cup Butter
1 Egg yolk
1 cup Shredded gouda cheese; about
4 oz
One half cup Sugar
1 teaspoon Vanilla
One fourth teaspoon Salt
1 pn Nutmeg
1 cup Sifted allpurpose flour
One half cup Chopped pecans
1 tablespoon Grated lemon rind; optional
OR 1 tbsp candied ginger,
finely chopped, optional
Cream together butter, egg yolk, sugar, gouda, salt, vanilla and rind or
ginger if using. Mix together flour, pecans and nutmeg and add to creamed
mixture. Blend thoroughly. Roll in small balls the size of grapes. Press
flat with floured fork or floured flat bottom glass. Bake at 325 F for
about 15 to 20 minutes, until lightly browned. Cool on a rack. Makes 5 to 6
dozen wafers.
Note from top of recipe: Mildly cheesy and nottoosweet are these unusual,
savory wafer cookies.
