Recipe - Good Good Chili

3 pound Beef round steak 1/2in
Cub
3 tablespoon Oil vegetable
One half cup Parsley,fresh chopped
4 cup water
1 tablespoon Paprika
1 tablespoon Oregano leaves dried
2 teaspoon Cumin ground
1 One half teaspoon Red pepper ground
Three fourths teaspoon Coriander ground
One half teaspoon Salt
1 Bay leaf large
4 Garlic cloves crushed
1 cup Onion chopped
8 ounce Tomato sauce
1 cup Cheddar cheese shredded
1 cup Sour cream
1 Avocado chopped
Recipe by: Jo Anne Merrill 1Cut beef into 1/2inch cubes. Cook and stir
half of the beef at a time in oil in a dutch oven or heavy pan. Use medium
heat to lightly brown meat. 2Stir in remaining ingredients except cheese,
sour cream and avocado. Heat to boiling; reduce heat. Cover and simmer for
1 hour, stirring ocassionally. 3Uncover and simmer until mixture thickens,
about 1 One half hours; stir ocassionally. 4Remove bay leaf. Serve with sour
cream, cheese and avocado. Yield: 56 servings. Jo Anne Merrill
