Recipe - Golden Zucchini Muffins

2 Eggs
2/3 cup Grated carrots
2/3 cup Raisins
One half teaspoon Vanilla
One half cup Melted margarine or butter
One fourth teaspoon Allspice (or pumpkin pie
spice)
One half teaspoon Baking powder
1 teaspoon Ground coriander
1 One half cup Flour
2/3 cup Grated yellow zucchini

Preheat oven to 375oF, prepare pans. Put the first seven ingredients into a
bowl & mix well. Add the Remaining ingredients & blend until just mixed.
Spoon into pans & bake for 2025 min. Makes 12
