Recipe - Golden Potatoes With Carrots

3 md Baking potatoes, peeled, cut
in 1/4" slices
1 One half cup Sliced carrots, One fourth inch
thick
1 tablespoon Vegetable oil
1 cup Finely chopped onion
Three fourths teaspoon Dried thyme
One half teaspoon Salt
1/8 teaspoon Pepper
Cook potatoes and carrot in boiling water 5 minutes; drain.
Heat oil in a 10inch cast iron skillet over mediumhigh heat, swirling to
coat bottom of pan. Add potatoes and carrots; saute 5 minutes. Add
remaining ingredients; saute 10 minutes or until tender.
