Recipe - Gluten-Free Lemon Cake

4 Eggs
Three fourths cup Sugar
1 teaspoon Vanilla
One fourth cup Vegetable oil
1 tablespoon Lemon peel
2 tablespoon Lemon juice
One half cup Rice flour
One fourth cup Potato starch

Beat eggs and sugar together. Add vanilla, oil, lemon peel, lemon juice,
and flours. Beat until smooth. Pour into greased 9"x9" baking pan. Bake in
preheated 350 degree oven for 30 minutes. May frost or serve with hot
lemon sauce.
