6 lg Carrots, peeled and cut into
julienne strips
1 One half cup Celery, cut or sliced up One fourth inch
thick on a slant (up to 2)
One fourth cup Margarine
3 tablespoon Grated fresh ginger
1/3 cup Sugar
1 Lime
Melt margarine in heavy pan. Add carrots. Sprinkle with sugar. Cook and
stir over mediumhigh heat until carrots are tender crisp and sugar is
syrupy. Add ginger, then celery. Cook and stir 12 minutes. Add lime juice
and zest off lime and serve.
