Recipe - Ginger Plum Pork Chops

4 Boneless pork chops, 3/8"
thick
1 teaspoon Vegetable oil
1 Jar (8 oz.) plum preserves
2 teaspoon Ground dry ginger
3 tablespoon Cider vinegar
Heat oil in nonstick skillet over mediumhigh heat. Brown chops on one
side, turn; stir together remaining ingredients and add to skillet. cover
skillet, lower heat and simmer 5 minutes. Serve with roasted potato wedges
if desired. Makes 4 servings.
