Recipe - Ginger Melon Pork

1 tablespoon Cooking oil
1 pound Fresh pork leg cubedfresh
ham
One half Thinly cut or sliced up onion
1 Minced clove garlic
1 tablespoon Grated fresh ginger OR 1
teaspoon dry ginger
2 tablespoon Soy sauce
One fourth cup Dry sherry
2 tablespoon Wine vinegar
1 tablespoon Cornstarch
3 cup Melon cubed honeydew or
cantaloupe
One half cup Pickled watermelon rind
minced
Heat oil in large skillet over medium high heat. Brown pork cubes, stirring
until lightly browned, about 4 to 5 minutes. Stir in onion, garlic and
ginger; stir and cook for 23 minutes.
Mix together soy sauce, sherry, vinegar and cornstarch. Add to skillet.
Cook and stir until sauce thickens. Stir in melon and watermelon rind. Heat
through.
