Recipe - Ginger Cream Scones

2 cup Flour
6 tablespoon Sugar
1 tablespoon Baking powder
One fourth teaspoon Salt
1 1/3 cup Whipping cream
One fourth cup Minced crystallized ginger
1/3 cup Melted butter
One half cup Packed brown sugar

I love scones and am always looking for new recipes! I was thrilled to find
this one in my Sunday paper a few weeks ago they are quite tasty.
Preheat oven to 350 degrees. Grease baking sheet; set aside. Into medium
bowl, sift together flour, sugar, baking powder and salt. In small bowl,
beat cream; fold in ginger. Fold liquid into dry ingredients; knead
briefly. Shape dough into eight 3 One half by One half inch rounds on prepared baking
sheet. Brush tops with melted butter and sprinkle with brown sugar. Bake 12
to 14 minutes, until golden brown around ages. Makes 8 scones.
Low fat sour cream makes a good substitute for the whipping cream, but the
scones will need to be baked at 375 because of additional moisture.
