Recipe - Ginger Chicken Salad

3 pound Roasted or bbq'd chicken
12 ounce Spinach or romaine lettuce
1 cup Bean sprouts
1 Yellow bell pepper
Seeded and slivered
One half cup Toasted almonds
Three fourths cup Thinly cut or sliced up sweet red
Ginger
Optional...Enoki Mushrooms
DRESSING
3 tablespoon Red wine vinegar
1 tablespoon Light soy sauce
2 tablespoon Oriental sesame oil
1 tablespoon Juice from a jar of sweet
Red ginger
2 teaspoon Hoisin sauce
One fourth teaspoon Chinese chili sauce
One half teaspoon Salt
3 tablespoon Minced green onions
1 tablespoon Finely minced ginger
Discard chicken skin. Remove chicken from bones and cut into bitesized
pieces. Set aside. Bunch greens together and cut into thin slivers. Place
all salad ingredients into a large bowl. Mix dressing well. Toss with
