Recipe - Ginger Cheese Pie (6)

1 One half cup Graham cracker crumbs
One fourth cup Butter; melted
11 ounce Cream cheese
Three fourths cup Sugar
2 Eggs; well beaten
1 tablespoon Freshly grated ginger
1 pt Sour cream
2 tablespoon Chopped preserved ginger;
(we always use enough
crystallized ginger cut in
ca 1/8 to 1/4inch pieces
to amply dot the top)
Preheat oven to 350 degrees F. Mix crumbs with melted butter and press into
9inch pie pan. Blend cream cheese with One half cup sugar and the eggs. Beat til
smooth. Add grated ginger and pour into prepared crust. Bake 20 minutes.
Mix sour cream with remaining sugar and spread over surface of pie.
Sprinkle with chopped ginger. Return pie to oven with heat turned off for
34 minutes. Cool and chill til set.
