Recipe - Ginger Applesauce

10 md Granny Smith Apples *
2 21/2" Cinnamon Sticks
1 cup Apple Juice
1 teaspoon Grated Lemon Zest
1/3 cup Packed Brown Sugar
1 One half tablespoon Fresh Ginger
One fourth teaspoon Grated Nutmeg
* Granny Smith apples should be pared, cored and coarsely chopped.

Place apples, cinnamon, apple juice and lemon zest in a large saucepan or
Dutch oven. Simmer covered, stirring occasionally, over medium low heat
until apples are soft, 2025 minutes. Stir in sugar to taste, the ginger
and the nutmeg. Cook until sugar is dissolved and sauce thickens, about 5
minutes. Serve warm or cold. Remove cinnamon sticks just before serving.
