Recipe - Giardiniera (Pickled Vegetables)

Ingredients:

2 Carrots, peeled and cut or sliced up
diagonally
1 Celery stalk, cut or sliced up
diagonally
2 cup Cauliflower, cut into small
chunks
One half Red pepper, quartered and
cut or sliced up
1 Green onion, cut or sliced up
1 Clove garlic, cut or sliced up
1 cup White vinegar
One half cup Dry white wine
One fourth cup Water
One fourth cup Apple juice
2 teaspoon Salt (omit for lowsodium
diets)
8 Peppercorns
1 teaspoon Dried dill weed

Mix all the ingredients and refrigerate in a closed jar for two days.
