Recipe - Gere-A-Delis Black Bean Soup (Wash)

1 cup Black beans
1 lg Onion
1 lg Garlic clove; minced
One half cup Carrots; minced
One fourth teaspoon Pepper
7 cup Chicken; beef or vegetable
stock
One fourth cup Celery; minced
Three fourths teaspoon Cumin
One fourth teaspoon Salt
Soak beans overnight drain off water next day.
Add broth to drained beans, bring to a boil, reduce heat to low. Add
garlic, onion, celery and carrots. Cook 2 hours.
Season with cumin, pepper and salt.
Serve with a dollop of nonfat yogurt, salsa and fresh minced cilantro to
garnish.
