Recipe - Georgia Stewed Catfish

One half cup Butter or margarine
Salt
12 small To medium catfish
1 Three fourths cup Hot water; divided
One fourth cup Allpurpose flour
2 cup Milk
Salt and pepper
Melt butter or margarine in a roasting pan over medium heat. Salt the
catfish and arrange them so they lie flat in the pan. Add Three fourths cup hot
water, place pan in oven, and bake at 425ø until fish are done and lightly
browned. Remove from oven and continue cooking on top burner of range. Add
1 cup water and bring to the boiling point. Make a paste of flour and milk;
add to water in fish pan to make gravy. Add salt and pepper. Yield: 6
servings.
