Recipe - Generic Chili Recipe

2 tablespoon Oil
2 pound Chili meat *
1 lg Onion, chopped med.
2 cl Garlic, minced
2 teaspoon Cumin
2 tablespoon Chili powder
3 cup Canned tomatoes, w/joice
12 ounce Beer **
Salt/pepper to taste
Heat the oil (your choice of lowsmoke type) in a heavy pot over
mediumhigh heat. Add meat, onion and garlic, cook until browned. Add
cumin, chili powder, salt and pepper and stir to blend. Coarsely chop
tomatoes and add to meat with the juice. Stir in beer.
Simmer over low heat, uncovered for 12 hours, adding more beer or water
as necessary.
* If chili meat not available, use stew or soup meat.
** Some prefer flat beer for recipe instead of fresh.
