Recipe - Gemelli With Ricotta And Spinach

16 ounce Gemelli
1 tablespoon Olive oil
2 Cloves garlic; crushed
20 ounce Chopped spinach
1 Carton; (15 oz) skim ricotta
cheese
1/3 cup Grated Parmesan cheese
One fourth tablespoon Coarse ground pepper
Prepare pasta in boiling salted water. Meanwhile,heat oil in a skillet over
medium heat until hot. Add garlic ,stirring for 1 minute. Gradually add
spinach and 2 tablespoons of water;cook,stiring often,just until spinach
wilts. Remove skillet from heat. When pasta is done, remove 1 cup of pasta
cooking liquid, drain pasta ,return to pot. Add ricotta cheese, parmesan
cheese, pepper,One half tsp salt,spinach mixture and reserved cooking water.
Toss until well blended. Garnish with fresh grated Parmesan cheese
