Recipe - Gazpacho Soup (Vegan)

1 md Green Bell pepper; minced
1 md Red Bell pepper; minced
1 md Yellow Bell pepper; minced
4 Stalks celery; minced
2 Cucumbers; peeled and minced
28 Can Plum tomatoes; chopped
with liquid
6 tablespoon Lemon juice
2 tablespoon Olive oil
3 cup Cold water
One fourth cup Italian parsley; chopped
One half cup Fresh basil; chopped
One half teaspoon Salt
One fourth teaspoon Pepper
1 tablespoon Tabasco sauce
Combine all ingredients; mix well. Adjust seasonings. Serve chilled

NOTES : Variations: For a richer taste, add 2 to 3 tablespoons tomato
paste and a splash of red wine vinegar.
