Recipe - Gazpacho Salsa (Mf)

1 small Green bell pepper; finely
minced
1 small Yellow bell pepper; finely
minced
2 Kirby cucumbers; finely
minced
2 Vineripened tomatoes;
seeded and finely minced
2 Scallions; finely cut or sliced up
Olive oil and red wine
vinegar, to taste
Salt and freshly ground
black pepper
In a mixing bowl combine the peppers, cucumbers, tomatoes and scallions and
toss with olive oil and season to taste with salt and pepper. At the last
moment, add the red wine vinegar to taste
