Recipe - Gazpacho Pasta Salad

8 ounce Rotini; Twists or Spirals,
uncooked
4 md Ripe tomatoes; peeled,
seeded and chopped
One half cup Sliced green onions;
(scallions)
One half cup Peeled; seeded and chopped
cucumber
1 Clove garlic; minced
2 tablespoon Chopped cilantro; or 2 tsp.
dried cilantro
2 tablespoon Olive oil
1 tablespoon Red or white wine vinegar
1 teaspoon Salt
Cayenne pepper to taste
Prepare pasta according to package directions; drain. Combine pasta with
remaining ingredients. Cover and chill at least 1 hour. Each serving
provides: 127 Calories; 3.2 g Protein; 19.1 g Carbohydrates;
4.4 clove garlic; minced Fat; 0 mg Cholesterol; 312 mg Sodium.
