Recipe - Gazpacho Gelatin Salad

1 One half cup Cocktail vegetable juice
you could probably use the
spicy kind if your taste
buds go in that direction
One half cup Real mayonnaise
One fourth cup Red wine vinegar
2 tablespoon Oil
One fourth teaspoon Hot pepper sauce
1 Clove garlic, crushed
1 cup Diced cucumber
One half cup Diced green pepper
One half cup Diced onion
Sprinkle gelatin over juice; heat stirring constantly, until gelatin is
dissolved. Combine with next 5 ingredients; chill until slightly thickened.
Fold in remaining ingredients. Turn into a 4 cup mold. Chill until set.
This seems a little high in fat for todays taste. I bet you could leave the
oil out and use a low fat mayo. Anyways the taste is good and it is
