Recipe - Garrys Jerk Marinade

Categories: Poultry, Jamaican, Marinades, Barbeque, Garrys Jerk Marinade
Ingredients:

1 Onion; chopped
One half cup Scallion; chopped
1 teaspoon Salt
4 teaspoon Jamaican pimiento;
(allspice)
1 teaspoon Nutmeg
1 teaspoon Cinnamon
6 Habanero chiles
1 teaspoon Black pepper
4 Garlic cloves
2 tablespoon Fresh ginger root; grated
2 tablespoon Lime juice
One fourth cup Olive oil
One half cup Red wine vinegar
4 tablespoon Soy sauce
4 tablespoon Dark rum
2 tablespoon Brown sugar
2 tablespoon Fresh thyme

Instructions: Combine all ingredints and blend in food processor. Marinate
meat several hours before cooking.
