Recipe - Garlicky Shrimp And Cannellini Beans (Mf)

16 ounce White beans; drained and
rinsed
2 tablespoon Extra virgin olive oil
Minced clove of garlic
Water or chicken broth
8 ounce Peeled shrimp; deveined and
cut into 1/2inch pieces,
weighed after peeling
One fourth cup Chopped fresh parsley or
basil
Salt and crushed red pepper
flakes
Simmer beans, olive oil and garlic for 10 minutes. Add some water or
chicken stock to make the mixture soupier.
Add shrimp, cover and simmer 5 minutes or until shrimp turns pink.
Add parsley and season well to taste with salt and crushed red pepper.
Yield: 2 servings
